Ingredients Raw mango-1 kg Red chilli powder-1 tbsp Fenugreek ppowder-1 spoon Turmeric powder-1spoon cumin seed-1 spoon dry red chilli- 2 or 3 nos curry leaves-2 or 3 sprig Vinegar- 1 tbsp Asafoetida -1 tsp Salt to taste Oil for frying Method First we cut and clean the raw mangoes in to a bowl Then we add red chilli,fenugreek powder,turmeric powder and salt,mix well . Traditional Grandma’s Mango Pickle Recipe Ingredients : - 1 KG RAW MANGOES - 200 GRMS RED CHILLI - 100 GRMS MASTARD - 2 TBSP BLACK PEPPER - 1 TSP TURMERIC - 1/3 CUP SALT ADD TO RAW MANGO - 1/3 CUP SALT ADD TO WATER Method : - Take 1 kg Raw Mangoes, wash them, dry them using Kitchen towel and cut them into small pieces or medium sized pieces as per your choice - Now add 1/3 cup of Salt to the chopped Mangoes and cover it with plate and then place heavy wait on the chopped raw mangoes. Keep a side for 48 hours. - After 48 hours, drain out liquid from the raw mangoes and keep a side - Now boil 1lt water and let it cool down completely, then add 1/3 cup of salt to the water and stir well, this water we are going to use for grinding red chilli paste - Now in a blender add dry red chillies, and then grind using salt water which prepared earlier - Make a thick paste of red chillies and then to the same blender add mustard seeds, black pepper and turmeric powder, combine all ingredients using a spoon and again grind to make a smooth paste, add salt water if required while grinding - Now add this ground paste to the raw mangoes, combine everything very well - Mango Pickle is ready, Put it in a container and store it in a Refrigerator - All Your Favourite Recipes in One Place ! Cut the mangoes as your comfortable and cut into 1-inch cubes or else you could simply ask the vendor to cut the mangoes in about 1-inch cubes, but make sure you wash them thoroughly after getting from the market, pat dry them completely. • Now, spread a clean cloth over the table or a floor where you will dry them, and spread the raw mangoes over it evenly, making sure they don’t overlap each other. Cover it with a net or other thin material cloth and sun dry them for at least 5-6 hours. • After sun drying collect the mangoes and keep them aside for making achaar. • Grind the mustard seeds into a powder & keep aside. • Grind the fennel powder only about 15-20 % using the pulse mode as keeping the seeds intact as it is. • Now, take a bowl, add the mustard powder, crushed saunf, Kashmiri red chilli powder, haldi powder, salt, crushed methi, and 400 ml of raw mustard oil, along with sun dried mangoes, mix well. • Separately in a fry pan, heat 100 ml of mustard oil until its smoke releases. Once the smoke starts to release, switch off the flame & allow the oil to cool down a little bit, as the temperature of the oil comes down and 1 tbsp hing. • Now cool down the oil completely and then later pour this oil over the mango & mix well. • Now as the mangoes are mixed well with all the ingredients, its time to bottle them. Use any airtight container or a ceramic jar, make sure it’s clean & completely dried. • In the bottle pour some raw mustard oil and fill the bottle 3/4th with the prepared mango aachar, pour some more raw mustard oil over the aachar, the extra oil in the aachar will be its preservative, so please do not skip the addition of extra oil, you can fill approximately 100ml of raw mustard oil in each container. Seal the jar or cover with a cloth. • As the it bottled, now you have to keep the mangoes in direct sunlight for maturing and to get its distinct flavour. This process of bottling may take around 3-4 days. Cover it with a cloth and keep it for 2 days a room temperature. Then drain the extra water from it and keep it in the sunlight for 1 hour. For Pickle Masala, in a pan, put Fennel Seeds roast it for a min and take it out on a plate. Then roast the Cumin Seeds, Coriander Seeds, Black Pepper, Black Mustard Seeds, Yellow Mustard Seeds, Onion Seeds & take out them. Keep them for cooling down then coarsely grind roasted Fennel Seeds, Cumin Seeds, Coriander Seeds, Black Pepper in the mixer and mix all spices. Put Crushed Red Chilli Powder, coarsely ground Spices, Asafoetida, Black Salt, Salt, crushed Jaggery in the pickle. Then heat some Mustard Oil & when it turns lukewarm put Kashmiri Red Chilli Powder and mix it well and put the Oil in the Pickle. Mix them well & cover it with cloth and keep it for a day. Plz dont forget to like my fb page 🤍 For more recipes do visit my blog 🤍 Ingredients Raw mango-4 Chilli Powder-1 1/2 tbsp Kashmiri Chilli Powder-2tbsp Turmeric powder-1/4tsp Mustrad seeds-1/4tsp +Fenugreek -1/4tsp Mustard seeds-1/2tsp Fenugreek powder-2pinch Asafoeitida powder-1/4tsp Salt- Gingelly Oil -4tbsp Vinegar- Curry leaves - Green chilli-4 Garlic-5 Boiled and cooled water -1/2cup Method Choose good raw mangoes. Wash well and cut into small pieces. To this add 2tbsp of salt and mix well with hand. Keep aside for 2-3 hours In a kadai heat oil,splutter mustard seeds ,then throw in curry leaves.. Then add crushed mustard-fenugreek mix ..saute in low flame .. Then add garlic and green chillies. Fry them for few seconds .switch off the flame .. To this add chilly powders,turmeric powder ,asafoetida powder and fenugreek powder .Mix well .Then turn the flame and keep in low .. Saute till the raw smell goes. Very careful while doing this ,don’t burn the powders . Now add water and vinegar ..Boil well (add vinegar depending up on the quantity and quality of mangoes ) Switch off the flame ..After cooling down the liquid ,add mango pieces ..Mix well .. Check the salt. Store this easy spicy mango pickle in a glass bottle. Close the lid tightly. Can use after few days .. Note: If ur mango is too sour u can add 1/4tsp of sugar ..hurry then u .. . Add one tbsp of sesame oil (heat and cooled) in the top to avoid fungus .. So it will take time but tastes great .. It tastes just awesome. This is a perfect side dish. Any household does have mango pickle. As this is the season of raw mangoes let’s make this tangy and yummy mango pickle. You can try this and drop a comment for me. Do not forget to like, share & subscribe. Ingredients: • 3 Raw mangoes • 1 small katori Red chili powder • 1/2 tsp Turmeric powder • 1/4 tsp Hing • A little Cinnamon • 4~5 Cloves • 6~7 Peppercorns • 1/2 tsp Fenugreek seeds • 1 small katori Salt • 1 small katori split mustard seeds • 1 bowl Oil Method: • Wash mangoes really good and wipe them with a dry clean cloth. • The raw mangoes must dry completely. • Chop them into big pieces. • Take oil in a pan and heat it up really good to remove impurities if any. • Turn off the gas and keep the pan aside for a while. • Heat up other pan and add cinnamon, coves, peppercorns and heat them up just a little for about 3-4 minutes on medium heat. • Do not over roast the spices. • When the spices begin to release the aroma turn off the gas and add fenugreek seeds into hot pan. • Heat the fenugreek seeds with other spices in hot pan for just about 3-4 minutes. • Take the roasted out into a mortar and pestle and let it cool down a little. • In the same pan add salt and roast it on low heat for about 4-5 minutes to remove impurities if any. • This helps in preserving pickle longer. • Keep the pan aside. • When the oil has cooled down to warm add turmeric powder, hing and mix well. Keep the pan aside. • When the roasted whole spices cool down pound it into powder. • You can use mixer for blending. • Take the pounded masala out into a bowl. • Add red chili powder, salt and mix well. • Take the chopped raw mangoes and add the dry masala in it. • Mix everything well together. Raw mango should get nice coating of masala. • Add the oil and mix well. • Take a glass jar and wash it really good. • Keep this jar under hot sun to dry completely so as to sterilize. • Transfer the pickle into the glass jar. • Fill up the raw mango pieces first and then add the oil or masala so as to cover them. • Raw mango should float in oil. • Close the lid and keep the bottle under sun for about 10-15 days to marinate. • You can cover the glass bottle with clean cotton cloth and then close the lid. • Do not open the lid at all until the pickle marinates completely. • If you are living out of India then keep the pickle bottle in dry but warm place to marinate. Tips: • While buying raw mangoes choose hard raw mango and not a soft one. • Do not roast fenugreek seeds with other whole spices. These may get over roasted and release their bitterness into pickle. Ingredients Mango – 2 cup Coconut oil – 3tsp Mastard seed- 1tsp Garlic – 4 garlic clovs Ginger-1 big piece Asafoetida – 1tsp Chillipowder-3tsp Fenugreek powder – 1tsp Vinegar – small quantity Salt to taste Method . Take raw and unripe mango and cut it into small piece, wash and dry mango thoroughly. . Put the mustard seed into a pan of heated oil and when they pop. Add garlic, Asafoetida, ginger and curry leaves and stir well. . Then we add chilli powder, cumin seed, mango and salt to taste. Mix well and sautéd for a minute and then we add white Vinegar. Remove from heat and set a side. .
